Let us be real, it is hard for us to maintain a healthy diet, especially with the kids. Being a mommy is a full-time job and making sure that your kid is fine, clean, and every other thing in the house is clean as well is so hectic. Many mothers will opt for the easy to cook dinners that can be quick and healthy.

Then we have another that Kids can be picky about their meals. They can be demanding that store-bought mac n cheese or just something like ice cream for dinner. We completely understand that easy meals for kids are not always healthy too. Therefore, we have come up with a simple recipe that will make your cooking time easy, and it will be packed with lots of healthy kale; we are talking about kale mac n cheese.

Why is Kale Mac N Cheese perfect for the entire family?
There are two reasons that we really wanted to have a dish that everyone on the dinner table can eat. First of all, kale is one of the amazing sources of minerals, vitamins, and fiber that not just toddlers need, but we as adults need that too.

Honestly, many of us may have tried kale, but the texture is not everyone's cup of tea. But chopping the kale into smaller pieces and tossing them through the creamy mac n cheese covers the texture. In short, as an adult, you will get a chance of eating kale.

The second reason is that eating such vegetables in disguise with your toddler will make them think that it is just something normal. As you know, kale has a strong taste, but cheese can easily cover up that strong taste. It is a kind of positive reinforcement that you are eating the same mac n cheese and letting your kids see that there is nothing better than that. It's a win-win situation for mommy, like no extra cooking for toddlers, and they are having little bites of health.

Making toddler meals is hard work accompanied by a long list of do's and don'ts. Vegetables are like the biggest enemy for the toddler, and kale is like the king of all. But there is so much that kale can provide for the healthy growth of your little angel.

Kale is full of nutrients that it has more iron than spinach and beef. It has more Vitamin C than oranges and more calcium than the glass of milk per day. It is a miracle of nature. It is rich in Vitamin K, Vitamin A, and Potassium that protect the eyesight and heal in strengthening the toddler's bones.

Here's how to prepare this power-packed dish:

- 3 large kale leaves
- 1 garlic clove (finely chopped)
- 2 cups dry macaroni pasta
- 3 cups milk or vegetable broth
- 1.5 cups shredded cheese
- 2 tbsp olive oil

1. Remove stem from leaves by slicing alongside both sides of the kale leaf with a knife.
2. Chop stemless leaves into small pieces.
3. Heat olive oil on medium heat in a pan and add kale and finely chopped garlic cloves. Cook until garlic aromas start to arise.
4. Add desired milk or vegetable broth and macaroni pasta. Cook on medium heat until pasta is al dente.
5. Stir in desired shredded cheese until melted.
6. Serve and enjoy!
